灌汤包子,是中国的传统食品,早在北宋市场上已有售卖,称灌浆馒头或灌汤包子。
面皮的做法,有半发不发、烫面和冷水面等不同的做法,讲究筋韧光滑,不漏汤,不掉衣,现在多见为小笼蒸制,使它更精致可口了~
但馅芯,通常都是肉类掺猪皮冻调制而成。。。
在这里,我们用香菇素食高汤和寒天粉做冻儿,替代皮冻儿,做出的鲜美味道,是一样赞!
特别喜欢咬开小笼包子的一角儿,吹一口气儿进去,含住小笼的口儿,吸~~~~~满口鲜美汤汁喔~~~
记住:一定要配吃那个姜丝哦!这可是点晴儿之笔!

用料
香菇素高汤
1汤匙
饺子粉
100g
鲜香菇
5朵72g,焯过的
胡萝卜
28g
60ml
寒天爱玉冻粉
7g
姜末
1茶匙
1/8茶匙不到1g
胡椒粉
1/8茶匙
麻油
1茶匙
2/3茶匙
姜丝
1汤匙
香醋
2汤匙
素食灌汤小笼的做法
- 香菇素高汤,水,寒天爱玉冻粉,混合均匀,煮开,至冻粉融化
- 煮好的香菇素高汤冻粉水晾冷,放入冷藏或冷冻至凝固;其实我直接放冷冻了。。当然不环保哈。。不过会快。。不急的话,放室温一样凝固的
- 面粉,淋入水,用筷子和成雪花状
- 再和成比较均匀的面团,松驰10分钟
- 香菇、胡萝卜切碎或用料理机打碎
- 素冻儿用水果刀划碎成小块,加入素馅中
- 面团洒点面粉稍揉光滑,再放置5分钟,搓长条,切成10个面剂

- 用擀面杖擀成圆面皮,包入馅料
- 面团洒点面粉稍揉光滑,再放置5分钟,搓长条,切成10个面剂
